Who Needs You?

I have been on the search for years trying to mimic the Lofthouse Cookie. You know the expensive cookie with the pastel icing and sprinkles on top? They are super soft and highly addictive so once you try one you are driven to go back to the store and buy more when they package is gone. Did I mention there are only a dozen cookies in a package? Finally I think I have found a recipe that is so close that the family finally said "this is it!" As much as I adore Lofthouse Cookies I can finally make my own for a tiny fraction of the price and make them with whatever color icing and sprinkles I want. I would have taken a picture of the finished product, but the cookies vanished before I could do it.

The recipe I found was within plain sight this whole time and it is amazing that a box of baking mix that cost $1.98 at Walmart could make such a yummy cookie! You need a box of Jiffy brand baking mix; it is by the Bisquick. Do NOT get the Jiffy cake mix they are not the same!

2 cups Jiffy Baking Mix
2/3 cup sugar
1/3 cup milk
5 Tbsp shortening
1 egg
1 tsp vanilla

Dump everything in a bowl and mix (I could by hand easily). Roll into walnut sized balls and place on a greased baking sheet. Bake 8 to 10 minutes in a 350 degree oven. Remove from pan and allow to cool. Frost with your favorite buttercream icing. Don't forget the sprinkles! These are best if they can sit overnight to soften up.

This was the recipe I used and it dries enough you can stack the cookies without too much of a problem. Usually I use a buttercream recipe with butter but was running low on experiment day.

1 cup shortening
4 cups powdered sugar
4 Tbsps milk
1 1/2 tsp almond extract (vanilla is fine too)

Combine all together until smooth. Slap on top of cookies.

The cookie recipe is on the back of the Jiffy baking mix box--I am not a fan of boxed mixes but decide this one is ok!
