Wise man once say : “Man who run in front of car get tired, man who run behind car get exhausted.” Being exhausted is how I have felt these past few days. My poor brain is tired before my feet hit the floor in the morning and I am exhausted by the end of the day! Thoughts of what needs canned, dehydrated, washed, fed, watered, school lesson plans that need written, and what to make for meals swirl around in my head like a tornado ripping through the plains in May.
This week’s focus has still been on food preservation and getting ready for winter. We have seen a lot of fog in the mornings and that is a sign of wet weather to come. Unfortunately it will be late fall which could mean snow! Tomatoes are still turning and I have lost track of how many jars of salsa I have put up. I am done with pizza sauce and meat sauce and today started on plain ole tomatoes for chili. I have a ton of peppers setting on and will make some pepper jelly some time in the next few days. I also picked up a lug of peaches yesterday and canned 7 quarts of halves and quarters and 7 half-pints of spiced peach butter which is one of Colton’s favorites.
James dug potatoes last week and I have been peeling, slicing, dicing, shredding them and putting them in the dehydrator. After they dry we put them in 2 to 3 cup portions and vacuum seal them in bags. Throughout the year we can pull them out and have hash browns, mashed potatoes, scalloped potatoes, and fried slices and never worry about having them go bad. Today I have 9 trays of hash browns that will give us 9 meals worth. I admit I spent about an hour and half but that was peeling, shredding, blanching, cooling, putting them on the trays and cleaning up.
Knitting has taken a back seat to canning but I still squeeze a little in before I go to bed. I finished another dishcloth and currently am working on a baby bib for my niece Misty. I am hoping after pulling the tomatoes from the canner and eating a late lunch I can get some sewing in. I would like to get some more paper towel replacers made and a few other small projects done. We feel very blessed to be given the opportunities we have and the resources as well to better our lives. Sometimes it is nice to look back and see what we have accomplished in the day and think that maybe we are not that tired after all!
